[Development] CI testing on XWayland only, not real X11

I keep using real X11 mostly.  I doubt that it will become impossible anytime soon. I’d be very disappointed if it does, and suspect that many others would be too: therefore it doesn’t seem likely.

I think CI needs to test all 3 ways; it will tend to happen when we have a suitable assortment of distros.  But so far we don’t have enough stability when running the existing tests with the Wayland plugin; that continues to need work.
