The file format I was desperately looking for is described here:

  http://standards.freedesktop.org/desktop-entry-spec/latest/

The files are called *.desktop. As I said, they specify several stuff, e.g. the MIME-Type associated with that application, the icon, the location on the desktop/start menu etc.

I think using the same *.ico file as a desktop icon should work, but when in doubt use *.png.
